I think part of the problem is people selling look at what prices others are selling at.. If 1 person had a STE for £200, the second person would list at £190 or something.. and if people really wanted a STE badly, they would pay it. That is what happened years ago.. then when everyone saw the crazy...

A doner ST is needed for basically everything. I do have a lot of custom chips and connectors in my store, but a full doner ST may be a cheaper method chip wise, but likely increase soldering costs a bit as well, and maybe postage costs. So people understand byte swapping.. its to make cards PC & ST compatible without "software byte swapping" which is very slow. The swap will be done in hardware and so, no speed loss. The firmware will take care of all the clever switching. I think getting away from all the issues in swapping cards ...
